Currently, there are restrictions in Moscow: you only allowed to visit a restaurant if you have a QR-code confirming your vaccination. As a result, restaurants became empty and switched to take-away and delivery. We allowed ourselves a fantasy on what restaurants could look like so that everyone, without exception, could visit them.

The new space-planning organization of restaurants will help keep business in the city.

The main idea of ​​the new structure of the restaurant is in the separation of visitor places and service personnel.

There is a dividing wall between visitors and staff, in which there are hatches for serving and cleaning dishes.

The visitors’ area is divided into compartments with tables for the required number of seats: 2, 4, 6, etc. Each compartment has a separate entrance from the street. The service area is created in a way that allows access to all compartments. Each has a lockable hatch. After each visit, the compartment is automatically disinfected by spraying agents, UV rays or artificial ventilation.

Thus, the intersection of flows in the visitor’s hall and the exchange of viruses, as well as the exchange of viruses with the service personnel, are excluded. In this case, there will be no need to wear a mask in a restaurant, which is already extremely difficult.

The design of such a space can be made in any style at the request of the designer or customer. Dividers and compartments can be transparent to give visitors a social feel or can be solid for privacy. The kitchen can be visible or closed.

The above does not hinder the freedom of creativity. But, of course, it will affect the efficiency of space usage and the appearance of restaurants.

Each compartment may have its supply and return airflow, as well as air conditioning and heating. Toilets should be arranged according to the principle of a cubicle with a full set of equipment (sink, toilet, bidet, trash can, hygiene products). All equipment should be contactless. And after each visit, the toilet should be disinfected automatically. The entrance to the toilet is also from the street.

The human hostess could be replaced with an electronic queue management system. Or with a robotic hostess even, which, it seems, is not at all a surprising and distant future.
